Crumpets without flour

3 eggs

125 g cream cheese

2 tbs cream  

2 tbs Fiberhusk

50 g shredded cheese

spice to taste

Mix the cream cheese with the cream and blend. Put the spices in that you prefer and mix. Blend the eggs and stir into the cheese. While blending vigourously let the Fiberhusk stream into the egg/cheese mixture. Stir the shredded cheese into the mixture. Let stand until it becomes a thick dough. Use two spoons, that you first dip into cold water, to make small buns.  Put the buns on baking paper and flatten them. Remember that the buns will need some space around them. Bake in 175°C ca 15 min. or until they get the colour you like.

Fiberhusk or  ground ‘Psyllium seed husks’ are also used for gluten- free baking. You will find it in stores or in Internet shops  offering products to people with allergies.
